The nutritional values per 100g of uncooked ash gourd are:

  • Calories: 13 kcal
  • Carbohydrate: 4 g
  • Protein: 0.3 g
  • Ash: 0.3 g
  • Fat: 0.2 g
  1. Ash gourds are 96% full of water. The remaining 4% constitutes some carbs, proteins, and other nutrients. 
  2. It is a low-calorie vegetable with about 2.9 g of dietary fibre.
  3. Calcium, magnesium, and phosphorus are present in low quantities in the milligram range.
  4. Smaller traces of iron, potassium, and zinc are also part of the nutrient list.
  5. It contains 13 mg of vitamin C, which makes up a good portion of the daily recommended value.
  6. Ash gourds have high antioxidant content. The two important antioxidants found in them are carotenoids and flavonoids. They combat heart diseases and certain types of diabetes.

INGREDIENTS

Ash gourd/vellai poosanika/petha – 250 to 300g …… Serves: 2

Salt/ pink salt/ kala namak – 1 tsp.

Black pepper – 2 to 3 tsp.

Lemon juice – use 1 whole lemon if using a small one or ½ in case of a large one

Water – 600ml to yield two glasses or as required

DIRECTIONS

  • Remove the skin and seeds from the required quantity of ash gourd.
  • Cut them into large chunks.
  • Blend all the ingredients well smooth.
  • Finally, check the salt and pepper quantities before serving.
  • At this stage, you could optionally add honey or sugar and give it a quick blitz.
  • Serve chilled.
